WHAT IS DETROIT PIZZA?
As the story goes... Detroit Style Pizza was born in 1946 by none other than Gus Guerra at his neighborhood bar Buddy's Rendezvous. He and his wife Anna utilized a Sicilian dough recipe and created what would later be known as Detroit Style Pizza.
Detroit Style Pizza has a soft and airy square crust, a crunchy exterior and caramelized cheese edges. The thing that makes this pizza a Detroit pizza is the steel pan that it is baked in... while originally baked in blue steel automotive pans, today they are prepared in thick steel pans that are more similar to cast iron skillet than a cake pan.
The classic preparation of a Detroit Style Pizza is cheese first, then sauce and not the other way around. While we aren't set out to recreate this amazing regional pizza, but as we say we are “born in Tucson but inspired by Detroit!”
